Recipes from the Heart, great for the Tummy!

Spanish Rice

(submitted by:  Marvin C. - Spouse to Stella C.)

4 cups cooked rice

3 lbs. Hamburger

1 can (14.5 ozs.) Stewed Tomatoes, Italian Style

2 cans (8oz. size) Tomato Sauce

Cumin (to taste)

Paprika (to taste)

Cayenne Pepper (to taste)

Garlic Powder (to taste)

Montreal Steak Seasoning (to taste)

In a large pot (or big pan), brown hamburger, drain off fat, place back onto stove.  Add the seasoning (Montreal Steak Seasoning, Garlic Powder, Cayenne Pepper, Paprika and Cumin) to the hamburger, stir well and let it cook for a few seconds.  Add the two cans of tomato sauce, simmer at medium heat for a couple minutes, ensure to stir occasionally.  Taste mixture, add more seasoning as deemed necessary (I like mine a little hot, but not too hot).

Add the 4 cups of cooked rice to the mixture, reduce heat to medium low, stir mixture thoroughly so that rice distributes evenly.  Add the stewed tomatoes, turn heat off but let the remaining heat finish off the cooking process while stirring in the stewed tomatoes.

This dish can be served with a side dish of either Spam or Luncheon Meat.

For me, I like to add a little 'kicker' to my plate, so I give a couple swooshes of shoyu, just to give it a little more bite.

Personal Note:  Although I'm not an employee of the Judiciary Section, I've known Aunty Edna for as long as Stella's been working there.  I just wanted to give my own contribution to this project, because Tutu is truly a good friend.  Thank you for understanding, and "Mahalo Tutu" for the many years of friendship!
