Apple Carrot Cake

1 1/2 cup salad oil

2 cup sugar

4 eggs

1 cup grated carrots

2 cups grated apples

2 cups flour

2 tsp cinnamon

1 tsp salt

2 tsp baking soda

1/2 tsp nutmeg

1 tsp vanilla

1/2 cup chopped nuts


Cream Cheese Icing

2 cups confect. sugar

4 Tbsp butter, softened

4 ozs. cream cheese, softened

1 tsp vanilla



Preheat oven to 350 degrees.  Grease and flour 9"x13" pan.  Cream oil and sugar well.  Add eggs and beat.  Add carrots and apples.  Set aside.

Combine dry ingredients.  Add to moist ingredients and mix well.  Pour batter into pan and bake for 40 to 45 minutes.  Cool.  Mix cream cheese icing ingredients together until creamy.  Frost on cooled cake.


*Note:  You can replace all the oil with applesauce and the cake still tastes great!
