Sushi Delight

4-1/2 cups rice

4-1/2 cups water

1-1/8 cups sugar

2 Tbsp salt

2/3 cup rice vinegar

1/2 cup furikake nori

1 pkg. (16 oz. size Imitation Crab, chopped)

1 cup mayonnaise

1/2 tsp salt

4 ozs. takuwan (Japanese pickled white radish, chopped)

1 Japanese cucumber, chopped (optional)


In a rice cooker, rinse rice, drain.  Add water and let stand 10-15 minutes.  Stir rice before cooking.

While rice is cooking, combine sugar, the 2 Tbsp salt and vinegar into a saucepan and cook until sugar dissolves.  Pour over slightly cooled rice, mix well.  Evenly sprinkle 1/4 cup of the furukaki nori in a 9"x13" rectangular glass dish.  Spread seasoned rice over furikake.

Combine crab, mayonnaise and remaining 1/2 tsp salt, spread over rice, layer takuwan and cucumber over the crab mixture.  Sprinkle with the remaining 1/4 cup furikake.  Cover and refrigerate.  Cut into squares.  Serves 20.
