Mave's Homemade Blueberry Scones

Dry Ingredients:

2 cups All Purpose Flour

1/2 cup granulated sugar

2 tsp baking powder

1/4 tsp baking soda

1 tsp salt

1 tsp grated lemon zest

 

Wet Ingredients:

1/2 cup milk

1/2 cup sugar

 

Other Ingredients:

1-1/2 cups fresh blueberry (place in freezer)

8 Tbsp butter (2 blocks), grated and frozen

 

Mix dry ingredients with frozen butter.  Do not overbeat.  Add dry ingredients to wet ingredients.  Mix liquid mixture - fold in.

Heavily flour board and knead quickly 6 or 7 times.  Roll dough out the 12 inch square (12x12).

Fold into thirds with pastry scooper.  Fold in another thirds into square.  Place dough in freezer for 5 minutes.

Roll dough in 12 inch square.  Press cold blueberry into dough quickly.  Roll into log.  Flatten dough into 4 inch wide.  Cut in 4 pieces.  Cut into triangles.

Brush top with butter and sprinkle with sugar.  Bake for 15 to 20 minutes at 425 degrees.

 *Note:  Do not use a metal bowl.  All ingredients must be COLD... cold butter, cold blueberries, cold dough.  Do not over mix and over handle dough.  It is better to use a pastry scooper - the heat from your hands will melt the butter and change the temperature of the ingredients.
