Recipes from the Heart, great for the Tummy!

5 cups mochi rice (cooked in rice cooker)
1 (16 oz) brown sugar
¾ cup granulated sugar
1 can fozen coconut milk
½ can water
Cook rice (add extra water) as usual in rice cooker.

In a quart size pot, over medium heat, prepare sauce. Mix until consistency is like molasses. When rice is finished cooking, transfer to a 9 x 13 inch pan.  Pour sauce (save 1/3 cup for glazing) over rice and mix thoroughly.  Cover rice evenly with sauce.  Let stand for 10 minutes and rice will absorb sauce.

Bake at 350º for 1 hour.  When done, pour remainder of sauce over top, spread evenly and broil for 5 minutes. This will create a glazed top layer.  Cool and cut into pieces.
